Grilled Turkey

Ingredients:
* 1 turkey, thawed
* 2 apples
* 4 plums
* 1/4 tsp sage
* 1/4 tsp garlic powder
* 1/4 tsp Italian seasoning
* 2 oz tequila (or preferred spirit)
* One piece of cheesecloth large enough to hold fruit misture

Directions:
Boil turkey in a large pot of water for approximately 2 hours (you may add sage and garlic for additional flavor).
While turkey is boiling mash the apples, plums, spices and tequila and let set for one hour at room temperature.
Wrap fruit mixture in cheesecloth and tie the opening tightly.
After turkey has boiled for two hours, remove from pan and stuff the spice bag into the turkey cavity.
Wrap turkey in aluminum foil and place on the grill for about one hour or until done (varies based on size of turkey).
The spices bake all through the turkey and it remains very moist.

Notes: This is a wonderful Thanksgiving day meal, it may sound complicated but, it’s actually a very easy way to fix a turkey.

Bean Soup

Ingredients:
1 can (14.5oz) chicken or vegetable broth
1 can (15oz) black beans, rinsed and drained
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/8 teaspoon crushed red pepper
1 clove garlic, finely chopped
1 jalapeno chili, finely chopped
1 medium onion, chopped (1/2 cup)
1 small carrot, sliced (1/4 cup)
2 tablespoons tequila, if desired (dry sherry can also be used)
1/4 cup diced

Vegetable Turkey Loaf

Ingredients
1/2 pound ground turkey
1 slice of bread, torn in small pieces
2 eggs or 1/4 cup fat-free cholesterol-free egg product or 2 egg whites
1/4 cup shredded carrot
2 tablespoons chopped onion
2 tablespoons chopped green pepper
2 tablespoons chopped celery
2 tablespoons chili sauce or ketchup
1/8 teaspoon salt
dash of pepper
dash of garlic powder
2 tablespoons chili sauce or ketchup

Directions:
1. Heat oven to 350 degrees.
2. Mix all ingredients except the last 2 tablespoons chili sauce. Shape mixture into loaf in center of ungreased shallow baking pan. Spoon 2 tablespoons chili sauce over loaf.
3. Bake uncovered about 45 minutes or until no longer pink in the center.
